Since spending Easter this year with my sister, who is a total healthy eater, I’ve tried really hard to eliminate all sugar from my diet as well as any food that’s in a bag, can or box. I’m still eating sugars by way of fruits and certain foods with naturally occurring sugars but refined sugar, granulated sugar, sugar in the raw, any type of high fructose corn syrup or variation of…that type of sugar is not an option anymore. I’m an ice-cream junkie, a cookie-holic & LOVE chocolate. So this has been pretty tough for me, especially cutting sugar from my coffee. But luckily there are loads of ‘healthy’ ways to satiate my sweet tooth and stick to a cleaner way of eating.
Case in point: Nutballs!! I call them Nutballs, you can call them whatever…

NUTBALLS
1/2 cup almonds
1/2 cup walnuts
1tbsp RAW honey (melted with a splash of water)
1 tbsp vanilla extract
2 tsp Cacao
Dash of salt

Zap it in a food processor (I use my NutriBullet) till it’s like a kinda chunky smooth consistency. Roll it out into little balls and stick them in the fridge.

Just one and I’m totally satisfied! I’ll eat one before the gym to boost my energy or as part of my mid-day snack.

I have a feeling I’ll be making these often and playing with the recipe as well.
